My guess is that she returned home to Kent with her baby. Both Thomas and Eliza gave their address as 14 Lansdown Crescent.1,2,3,4 Thomas and Eliza I believe still lived at 6 Cliff Bridge Terrace, Scarborough and it may be found on RG9 Piece 3619 Folio 23 Pages 41 and 42. These two pages are missing from the census.1 Thomas was listed as head of household in the census of 2 April 1871 in 6 Cliff Bridge Terrace, Scarborough, Yorkshire, England, Thomas is listed as a lodging house keeper.
